Cider Halibut:
2 Lb. Halibut Fillet
1 C. Apple Cider
1/2 Tsp. Lemon Thyme, Preferably Fresh
1/4 C. Diced Red Onion
2 Tsp. Ground Black Pepper
1/2 Tsp. Salt
1/4 C. Cider Vinegar
1/2 Tsp. Ground Allspice
Spiced Apples: 2 Red Apples cut in a Julienne, Skin on
1 C. Apple Cider
1/4 C. Honey
1/2 Tsp. Ground Allspice
1/2 Tsp. Ground Black Pepper
1/2 Red Onion, Halved and Sliced
Cooking Instructions: Cider Halibut: Cut four 8 oz. portions of Halibut. Mix Cider Halibut ingredients and marinate for at least 3 hours.
Make Spiced Apples just before serving: Put all ingredients except Apple in a pan, bring to a boil and simmer until reduced to a syrup. Add Apples, cook until al dente. Remove from heat. Keep warm. |
