Your Favorite Sauce


1 Salmon Cleaned, season the Iinside with Salt and Pepper.

Insert a 30 inch Spit along the backbone of a 6 to 8 pound Salmon.

Balance the fish so that it will turn easily. Adjust the forks ans tighten the screws.

Using a piece of chicken wire, fold this around the fish with metal skewers, this prevents the flesh from falling off the bones while cooking.

Have the spit about 8 inches from the slow coals.

Start the spit turning and cook for 1 hour to 1 1/2 hours or until the fish flakes easily when tested with a fork.

Serve with Lemon and your Favorite Sauce.
