2 LB HALIBUT STEAKS (ABOUT 1/2 PER SERVING) RINSED IN COLD WATER AND PATTED DRY
4 CLOVES GARLIS, MASHED
2 MANGOS, 1 MASHED FOR MAINADE: 1 CUT INTO SLICES AS A GARNISH
2 LEMONS, CUT INTO WEDGES
1 SMALL PAPAYA, MASHED
1-2 CHILI PEPPERS (TO TASTE), FINELY CHOPPED
3 TBST LIME JUICE
1 1/2 TBSP. FRESH CILANTRO, CHOPPED
1 TBSTP OLIVE OIL

IN A BOWL, ADD GARLIC, MANGO, PAPAYA, LIME JUICE, CHILI PEPPERS, CILANTRO AND OIL. WHISK BRISKLY TO BLEND: MARINATE HALIBUT STEAKS IN MIXTURES. COVER AND REFRIGERATE (1 HOUR). ARRANGE STEAKS IN A BUTTERED BROILING PAN: BROIL (6-8 MINS) 4-5" FROM HEAT SOURCE. BASTE REGULARLY WITH MARINADE. SERVIE HOT, GARNISHED WITH MANGO SLICES AND WEDGES OF LEMON TO THE SIDE.

ALAKSA HALIBUT ROYALE SERVERINGS PER RECIPE 2-4

COOKING TIME 10 MIN (+)

1 1/2 LB HALIBUT STEAKS, THAWED IF NECESSARY & RINSED IN COLD WATER
2 LEMONS, CUT INTO WEDGES
1 CUT DRY WHITE WINE
2 TSB. SALT
1/4 CUP FINE DRY BREAK CRUMBS
1/2 CUB EACH SOUR CREAM & MAYONNAISE
1/2 CUP GREEN ONIONS, MINCED
PAPRIKA, FRESH PARSELY, CHOPPED AS A GARNISH


COMBINE WINE AND SALT AND POUR OVER HALIBUT STEAKS.

MARINATE IN REFERATOR AT LEAST 1 HOUR, THEN DRAIN ON PAPER TOWELS.

DIP BOTH SIDES IN BREAD CRUMBS. PLACE HALIBUT IN SHALLOW BUTTERED BAKING DISH.

COMBINE SOUR CREAM, MAYO AND GREEN ONIONS:

SPREAD OVER HALIBUT & SPRINKLE WITH PAPRIKA.

BAKE AT 450 f FOR 10 MIN PER INCH OF THICKNESS, MEASURED AT THICKEST PART,
OR UNTIL FISH FLAKES WHEN TESTED WITH A FORK.
