Title:Salmon Baked with a Cucumber Sauce
Detail:2 to 3 Pounds of Salmon

Butter, Melted

Salt

Pepper

1 1/2 Cup Sour Cream or Plain Yogurt

3 Teaspoons chopped Parsley

2 Teaspoon Chopped Chives

1 Medium Cucumber, Peeled, finely Chopped, or Shredded

2 1/2 Teaspoons Lemon Juice


Heat oven to 350 degrees. Place Salmon in a greased shallow baking dish. Brush on melted Butter, and season with Salt and Pepper. Bake uncovered for 30 to 45 minutes. Checking frequently after 30 minutes to make sure it does not over cook and become dry. Fish should flake easily with a fork.


Remove Salmon from oven, section, removing any large bones. Place Salmon on a heat proof platter.


In a small bowl combine Sour Cream or Yogurt, Parsley, Chives, Cucumber and Lemon Juice. Spoon over Salmon. Return to oven for 5 minutes to heat sauce.


Serves 4 to 6 People
