| Title: | Halibut with White Wine, Stuffed with Crab |
| Detail: | 2 1/2 Pounds of Halibut Fillets, ( 6 Pieces Long Enough to Fold )
1/4 Cup White Onion, Chopped
1/4 Cup Butter
1 3 Ounce Can Mushrooms, Drained, Save Juice
8 Ounces of Crab Meat, Cooked, Flaked
1/2 Cup Saltine Cracker Crumbs
2 Tablespoons Parsley
1/2 Teaspoon Salt
3 Tablespoons Butter
3 Tablespoons Flour
1/4 Teaspoon Salt
Milk
1/3 Cup Dry White Sherry
1 Cup Swiss Cheese, Shredded
1/2 Teaspoon Paprika
Saute Onion in Butter until tender.
Stir in Drained Mushrooms, Crab Meat, Cracker Crumbs, Parsley, Salt, and a dash of Pepper.
Spread mixture on Halibut Fillets.
Bring both ends of Halibut Fillet up, and overlap.
Put in 12x7-1/2x2 inch baking dish. Seam side down
In sauce pan, melt Butter.
Blend in Flour, and Salt.
Add enough Milk to Mushroom Juice to make 1 1/2 Cups.
Add Wine and cook until thickened.
Pour over Fillets.
Bake 25 minutes at 400 degrees.
Sprinkle Cheese and Paprika over fillets and return to oven for 10 more minutes.
